 For the dough:

  • 350g (2 3/4 cups) plain flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves (optional)
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 125g (1/2 cup) unsalted butter, softened
  • 100g (1/2 cup) dark brown sugar
  • 1 large egg
  • 125ml (1/2 cup) golden syrup or treacle
